The Art of Brewing
The Art of Brewing
Every leaf carries the memory of mist, altitude, and ancient soil. What follows is not merely instruction — it is an invitation to slow down, to be present, and to honour the craft of the cup.
🍃 Nilgiri Green Tea
"The purest expression of the hills."
Plucked from gardens above 2,000 metres, our Nilgiri Green Tea is defined by its luminous clarity — grassy, sweet, and alive with the cool breath of the Western Ghats. Unlike Chinese or Japanese greens, Nilgiri green tea carries a natural brightness that is uniquely its own.
Water Temperature: 75–80°C | Leaf: 1 level teaspoon | Steep: 2–3 minutes
Brewing Style: Pour water that has rested off the boil for 2 minutes. Use a porcelain or glass teapot. Never squeeze the leaves — allow them to release naturally. Can be re-steeped twice, each infusion revealing a new dimension.
Benefits: Rich in catechins and antioxidants. Supports metabolism, mental clarity, and cellular health. Gentle on the stomach — suitable for daily consumption.
Best Time to Drink: Morning on an empty stomach or mid-morning as a mindful pause. Ideal before meditation or creative work.
Serve: In a clear glass or white porcelain cup, without milk. A single sprig of fresh mint or a sliver of lemon zest on the rim is all the elegance it needs.
🍃 Oolong Tea
"The philosopher's tea — neither here nor there, and all the more beautiful for it."
Partially oxidised and deeply nuanced, Oolong occupies the exquisite middle ground between green and black. Floral, creamy, and layered — each steep tells a different story.
Water Temperature: 85–90°C | Leaf: 1 teaspoon | Steep: 3–4 minutes
Brewing Style: Use a small clay or ceramic teapot if possible. Oolong is made for the gongfu method — multiple short infusions of 30–60 seconds each, building complexity with every pour. For a simpler brew, 3–4 minutes in a standard teapot works beautifully.
Benefits: Supports weight management, heart health, and blood sugar balance. Contains L-theanine for calm, focused energy without the jitters of coffee.
Best Time to Drink: Late morning or early afternoon. Perfect for long work sessions or creative thinking.
Serve: In a small, handleless cup. No milk, no sugar — let the natural sweetness speak.
🍃 White Tea
"The most whispered of all teas."
Barely touched by human hands, White Tea is the closest a leaf comes to its wild, natural state. Silvery, soft, and extraordinarily delicate — it demands the same quality of attention it took to produce.
Water Temperature: 70–75°C | Leaf: 1–2 teaspoons | Steep: 4–5 minutes
Brewing Style: Use the softest, purest water available — filtered or spring water is ideal. A glass teapot allows you to watch the leaves drift. Never rush this tea. It will not reward impatience.
Benefits: The highest antioxidant content of all teas. Anti-ageing, anti-inflammatory, and deeply nourishing for skin health. Lowest caffeine of all true teas.
Best Time to Drink: Early morning before breakfast, or as a meditative evening ritual. Exceptional for those sensitive to caffeine.
Serve: In your finest white porcelain cup. No additions. Breathe in the steam before the first sip — that moment is part of the experience.
🍃 Orange Tea
"Sunshine, distilled."
Vibrant and uplifting, our Orange Tea marries the boldness of Nilgiri black with the bright warmth of citrus. It is the tea of optimism — best drunk when the world needs a little more colour.
Water Temperature: 90°C | Leaf: 1 teaspoon | Steep: 3–4 minutes
Brewing Style: Brew strong and bright. For an iced version, double the leaf quantity, brew hot, then pour immediately over ice. Garnish with a thin wheel of fresh orange and a sprig of rosemary for a café-worthy presentation.
Benefits: Rich in Vitamin C and flavonoids. Supports immunity, digestion, and mood. The citrus notes aid in iron absorption when consumed after meals.
Best Time to Drink: Morning to kickstart the day, or as an afternoon pick-me-up. Exceptional as an iced tea in summer.
Serve: Hot in a wide-mouthed mug, or cold in a tall glass over ice with a citrus garnish.
🍃 Kashmir Kawa Tea
"A ritual older than memory."
In the valleys of Kashmir, Kawa has been brewed for centuries in copper samovars, shared between friends and strangers alike. It is warmth made tangible — spiced, saffron-kissed, and profoundly nourishing.
Water Temperature: 95°C | Leaf: 1 teaspoon | Steep: 5–7 minutes
Brewing Style: Add 3–4 strands of saffron, 2 green cardamom pods (lightly crushed), a small cinnamon stick, and 2–3 cloves to the water before brewing. Simmer gently. Strain into a traditional kahwa cup or a small glass. Finish with crushed pistachios or almonds and a drizzle of raw honey.
Benefits: Deeply warming and anti-inflammatory. Saffron supports mood and mental wellbeing. Cardamom aids digestion. Cinnamon regulates blood sugar. A complete wellness brew in a single cup.
Best Time to Drink: Cold mornings, after heavy meals, or as an evening wind-down. A traditional remedy for colds and fatigue.
Serve: In a small, ornate cup or glass. The ritual of preparation is as important as the drinking — take your time.
🍃 Lemon Tea
"Clarity in a cup."
Bright, clean, and invigorating. Our Lemon Tea is the reset — for the palate, the mind, and the body. Simple in composition, extraordinary in effect.
Water Temperature: 90–95°C | Leaf: 1 teaspoon | Steep: 3–4 minutes
Brewing Style: Brew the tea first, then add fresh lemon juice after removing from heat — heat destroys Vitamin C. A thin slice of lemon in the cup adds elegance. Sweeten with raw Nilgiri honey rather than sugar.
Benefits: Immune-boosting, alkalising, and deeply cleansing. Supports digestion, skin clarity, and liver health. An excellent morning detox ritual.
Best Time to Drink: First thing in the morning on an empty stomach, or between meals as a digestive tonic.
Serve: In a clear glass mug to appreciate the golden colour. A wheel of lemon and a cinnamon stick make it feel like a spa in a cup.
🍃 Chocolate Tea
"Indulgence, reimagined."
Rich, velvety, and deeply satisfying — our Chocolate Tea is the guilt-free luxury you deserve every day. The natural cocoa notes are complex and lingering, with none of the heaviness of hot chocolate.
Water Temperature: 90°C | Leaf: 1 teaspoon | Steep: 4–5 minutes
Brewing Style: Brew strong. A gentle splash of warm oat milk or full-fat milk deepens the cocoa character beautifully. For a mocha-style experience, add a pinch of cinnamon and a tiny pinch of chilli.
Benefits: Contains natural theobromine — a gentler stimulant than caffeine that lifts mood without anxiety. Rich in antioxidants. A mindful alternative to dessert.
Best Time to Drink: Mid-afternoon or after dinner as a dessert tea. A perfect companion to dark chocolate or shortbread.
Serve: In a wide, deep mug. Dust lightly with raw cacao powder for a finishing touch worthy of a patisserie.
🌿 Nilgiris Herbal Tea Sampler
"A botanical journey through the hills."
Our Herbal Sampler is a curated introduction to the extraordinary botanical diversity of the Nilgiris. Each blend is a world unto itself — caffeine-free, deeply nourishing, and crafted with intention.
Water Temperature: 90–95°C | Leaf: 1 teaspoon | Steep: 5–7 minutes
Brewing Style: Cover the cup while steeping to trap the volatile aromatic oils. Each blend rewards a slightly longer steep than traditional teas. Explore each variety at different times of day to discover which resonates most with your rhythm.
Benefits: Varies by blend — collectively supporting immunity, digestion, relaxation, and vitality. All naturally caffeine-free.
Best Time to Drink: Evening rituals, post-meal digestion, or whenever a moment of calm is needed.
Serve: In a ceramic mug, covered with a small saucer while steeping. No milk. Honey optional.
🌶️ Masala Tea
"The heartbeat of the Indian morning."
Bold, spiced, and unapologetically alive. Our Masala Tea is not merely a beverage — it is a ritual, a memory, and a declaration that the day has begun.
Method: Stovetop | Ratio: 1 tsp tea · 150ml water · 100ml full-fat milk
Brewing Style: Bring water to a vigorous boil with freshly crushed cardamom (2 pods), a thick coin of fresh ginger, a small cinnamon stick, and 2 cloves. Add tea leaves and simmer for exactly one minute — no more. Pour in cold milk and bring to a single rolling boil. Strain through a fine mesh into a pre-warmed cup. Sweeten with jaggery for authenticity, or raw honey for a modern touch.
Benefits: Ginger is anti-inflammatory and digestive. Cardamom supports respiratory health. Cinnamon regulates blood sugar. Together, they create one of the most powerful wellness brews in the world.
Best Time to Drink: Morning to awaken the senses, or mid-afternoon when energy dips. A traditional remedy for colds, fatigue, and low mood.
Serve: In a thick-walled ceramic mug or a traditional kulhad. The froth on top is non-negotiable.
🌼 Chamomile Tea
"The art of letting go."
Soft as a whisper, our Chamomile is the ritual of unwinding. Honey-sweet, floral, and profoundly calming — it is the tea that tells your nervous system the day is done.
Water Temperature: 90°C | Leaf: 1 teaspoon | Steep: 5–7 minutes
Brewing Style: Cover the cup while steeping to preserve the delicate volatile oils. The longer the steep, the more potent the calming effect. Add raw honey after steeping, never during.
Benefits: Clinically studied for its anxiolytic and sleep-promoting properties. Reduces cortisol, eases muscle tension, and supports digestive comfort. One of the most researched herbal teas in the world.
Best Time to Drink: 30–60 minutes before bed. Also excellent during moments of stress or anxiety throughout the day.
Serve: In a wide, shallow cup. A small spoon of raw honey and a single dried chamomile flower floating on top transforms it into something truly beautiful.

"The most magical tea in the world."

Water Temperature: 90°C | Leaf: 1 teaspoon | Steep: 5 minutes
Brewing Style: Always brew in a clear glass or white cup. Add lemon at the table, never in the kitchen — the colour change is the moment. For a stunning iced latte, brew strong, pour over ice, and top with coconut milk.

🍵 Premium Plain Tea
"The soul of the Nilgiris, undisguised."
This is where our story begins and ends. Bold, brisk, and unmistakably aromatic — our Premium Plain Tea is the purest expression of what the Nilgiri hills produce. No blending, no flavouring. Just the leaf, the water, and the moment.
Water Temperature: 95°C | Leaf: 1 teaspoon | Steep: 3–4 minutes
Brewing Style: Use freshly drawn, freshly boiled water — never re-boiled. Pre-warm your teapot with hot water before brewing. Steep precisely and strain immediately. Drink black first to taste the terroir, then with milk if you prefer — it holds up beautifully either way.
Benefits: Rich in theaflavins and thearubigins — antioxidants unique to black tea. Supports cardiovascular health, gut microbiome diversity, and sustained mental alertness.
Best Time to Drink: Morning as the anchor of your day. Also exceptional as an afternoon tea with biscuits or light pastries.
Serve: In a classic white teacup with saucer. Milk in first if you're a traditionalist. A small square of dark chocolate on the side is never wrong.
☕ Filter Coffee
"South India's most beloved ritual."
There is no coffee culture quite like South India's. Slow, deliberate, and deeply communal — our Filter Coffee is a tradition worth preserving, one cup at a time.
Method: Traditional South Indian Filter | Ratio: 2 tbsp coffee · 1 cup water · hot milk to taste
Brewing Style: Add coffee powder to the upper chamber of your brass or steel filter. Pour water at exactly 90°C — never boiling — and allow the decoction to drip slowly over 15–20 minutes. Do not press or rush. Mix one part decoction with three parts hot, frothy milk. Pour between two tumblers from a height of 30cm to create the signature natural froth. Serve in a traditional davara-tumbler set. Sweeten with cane sugar or jaggery.
Benefits: Rich in chlorogenic acids — powerful antioxidants that support liver health and blood sugar regulation. The slow drip method produces a smoother, less acidic brew than espresso. The ritual itself is meditative and grounding.
Best Time to Drink: Morning, without exception. Also a deeply comforting mid-afternoon ritual. The froth-pouring ceremony makes it a social experience — best made for someone else.
Serve: In a traditional stainless steel davara and tumbler. The clink of metal, the rising steam, the froth — this is not just coffee. It is memory.
From the mist-covered hills of the Nilgiris to your hands — every cup is a small act of devotion. Brew slowly. Sip mindfully. Share generously. 🌿
